THOUGHT FOR THE MONTH 

Whoa, we are nearly into August and it really feels like January was just yesterday. We have done so much over the last few months, from launching our new look website and opening our first physical shop at HQ, to sponsoring the Health Blog awards. When I actually stop to think about it all I can't believe we got it done in such a short space of time. None of this would have been possible without the help of the amazing SoulBia Team, thank you all, I absolutely love working with you guys and you make SoulBia the company I always dreamed it would be.

When I look back at what we have done it truly shows that dreams can become a reality and you should never stop pushing forward. Sometimes you have to look up and see the big goal but for me most of the time its about keeping your eyes on the small goals, the small steps that make the big dreams a reality.

'Big Dreams Small Steps' is my true mantra everyday. It doesn't matter how far you get everyday, it only matters that you are moving in the right direction.

PRODUCT OF THE MONTH
The BOSS BURGER from Moodley Manor. 
We’re well into Barbeque season, and the meat feast that these get togethers often are, can be a challenging social occasion for some of us, but Vegetarian friends, don’t fret! We have found a great product that means you can have your burger and eat it too (although you might opt for the grill instead of the BBQ). 

You don’t call a burger a “Boss” lightly, particularly in the world of meat alternatives, so just as you might expect, the “Boss Burger” from Moodley Manor is a meat alternative burger that merits your attention.  Capable of fooling meat lovers in taste tests (yes, really), this burger is the one you’ve been waiting for - all taste, and no sacrifice. We are delighted to have added it to our collection to give you a meat-free and delicious burger option.

Presented in a two burger pack, the Boss Burger is 100% plant based and suitable for freezing - so no problem stocking up for those summer events!

RECIPE OF THE MONTH
'Veggy Curry in a Hurry'
Inspired by the Happy Pear, this Vegetarian Curry recipe was created by Carol Banahan, incorporating one very special ingredient - Carol's Vegetable Stock (which you can buy here). Trust us when we say that this little detail will set your curry apart from the rest! We love this recipe because it is loaded with nutritious vegetables and it really is so easy to make! Perfect after a long day's work, or to whip up at the weekend.

Ingredients (Serves 4)
Organic Virgin Coconut oil
2 cloves garlic, chopped finely
1 thumb size piece of ginger, chopped finely
4-6 scallions, chopped
One whole head of broccoli chopped into small florets
1 red Pepper chopped into chunks
1 courgette sliced
1 red chilli, sliced finely
1 full can of full fat- coconut milk
3 tbsp almond or peanut butter
2 Tbsps of Tamari (or soya sauce)
Drizzle of pure maple syrup or raw honey
200 ml Carol’s Stock Market veg stock
2 tbsp curry powder
A handful of toasted cashews to top

Method
Get your wok fired up and add some coconut oil. Add your chopped ginger, garlic, scallions and chilli pepper and toss them around for a minute. Next add in our broccoli florets, courgettes and peppers and stir for another minute. Add your coconut milk, nut butter and tamari and mix well until all combined nicely. Now add your vegetable stock and your sweetener of choice and your curry powder. Let simmer away under the lid for about 5-7 minutes until veg is cooked but still crunchy. Top with your toasted cashews and serve with some turmeric rice. Kick back, relax and enjoy your delicious masterpiece!
